An extremely fresh tasting combination of herbs and greens.
Diet Types: Low Fat, Vegan, Vegetarian
  • 2 ripe tomatoes, seeded
  • 1 large beet, shredded
  • 4 cups mixed salad greens, torn
  • 4 tablespoons fresh basil, chopped
  • 2 tablespoons lime juice
  • 2 tablespoons maple syrup
  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoon salt
  • Serves: 4
    Cooking Time: Under 15 minutes
    Cut tomatoes in half crosswise. Gently squeeze out the seeds and cut tomato into thin strips. Place in a large bowl along with the beet and lettuce greens. Set aside. Combine basil, lime juice, maple syrup, olive oil and salt in a jar; cover and shake vigorously. Pour over lettuce-beet mixture and toss gently.
